A super simple veggie chilli recipe, for your children, made with tinned taco beans and microwaveable rice for extra speed and ease. You can use up any vegetable odds and ends you have; try sweetcorn, peppers, sweet potato or green beans. See method

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 carrot, grated
  • 1 courgette, finely chopped
  • 1 garlic clove, finely chopped
  • 395g tin taco mixed beans
  • 250g sachet microwaveable brown rice
  • 2 small handfuls of extra-mature Cheddar
  • 2 tbsp tzatziki
If you don't have any Cheddar, try using another hard cheese

Method

  1. Heat the oil in a frying pan and gently cook the onion, carrot, courgette and garlic for 8-10 mins until softened.
  2. Add the beans, stir well, cover and simmer for 5 mins until the beans have heated through.
  3. Meanwhile, heat the rice to pack instructions. Divide the rice and veggie chilli between 2 bowls. Top with the cheese and a spoonful of tzatziki.
