Try this three-ingredient fruity canapé idea for your next party. Everyone will love the sweet chilli pineapple skewers and sticky peanut dip, which make a quick and easy veggie twist on satay. Don’t forget to screenshot the ingredients list below the method before you go shopping.
Trim 1 pineapple to remove the base and leaves. Slice off the skin, cut into quarters lengthways, then cut out the core. Slice each quarter into 4 thin wedges then cut in half widthways to create 32 small wedges. Insert a skewer (wooden skewers should be soaked in cold water for 30 mins first) into each piece.
Preheat a large griddle pan over a high heat. Griddle the skewers in batches for 3 mins each side until charred and caramelised. Brush with 2 tbsp sweet chilli dipping sauce while still hot.
In a small bowl, mix together 4 tbsp crunchy peanut butter with 4 tbsp just-boiled water from a kettle and 1 tbsp sweet chilli dipping sauce.
Serve the skewers and dip on a platter or board.
