Enjoy a comforting dinnertime favourite on your night in for two with this scaled-down toad in the hole recipe. Chipolatas are wrapped in bacon then cooked in a fluffy Yorkshire pudding traybake with onions and tomatoes. See method

Ingredients

  • 3 rashers streaky bacon
  • 6 Tesco Finest pork chipolatas
  • 1 tbsp sunflower oil
  • 130g pack Tesco batter mix
  • 2 tbsp chopped sage
  • 1 red onion, cut into wedges​
  • 2 stems cherry tomatoes on the vine, around 100g
  • sage leaves, to garnish
If you don't have red onions, try using white, brown or spring onions

Method

  1. Preheat the oven to gas 6, 200°C, fan 180°C. Take the bacon rashers, place on a chopping board and stretch using the back of a knife. Halve and wrap tightly around the chipolatas. Transfer to an ovenproof frying pan (roughly 25cm diameter) or similar-sized roasting tin with the oil and roast for 10 minutes.
  2. Meanwhile make up the batter to pack instructions. Add the chopped sage and set aside.
  3. Remove the sausages from the oven (the oil should be smoking) and immediately pour in the sage batter. Arrange the onion wedges and tomato vines between the sausages, then return to the oven for 20-25 minutes until golden and risen well.
  4. Garnish with sage leaves to serve.
