Toast the slices of six-seed sourdough bloomer.
Scatter over the mozzarella and slow-roast tomatoes, shaking off excess oil, then top with the anchovies, if using.
Grill on a medium heat for 4-5 mins until the cheese has melted, then top with chopped parsley leaves, if you like.
