Ingredients

  • 1 x 160g tuna chunks in spring water, drained
  • 1 small red onion, finely chopped
  • 220g cherry tomatoes, quartered
  • 15g fresh flat-leaf parsley, finely chopped
  • 1 tsp sugar
  • 1 red chilli, finely chopped (optional)
  • 1 lemon, zested and juiced
  • 2 tsp olive oil
  • ciabatta, halved lengthways and lightly toasted, to serve
If you don't have red onions, try using white, brown or spring onions

Method

  1. In a large bowl, mix the tuna, onion, tomatoes, parsley, sugar, chilli and lemon zest and juice.
  2. Season, then stir in the oil. Tip into a lidded container, cover and chill until ready to eat.
  3. Spoon the tuna onto the toasted ciabatta to serve.
