Air-fryer cheeseburger nachos recipe

These loaded nachos make a great match day snack, perfect for sharing with friends. Topped with crispy mince, plenty of cheese and a homemade burger sauce, they're undeniably moreish! If you don't have an air-fryer, see our tip below on how to make them using your oven. See method

Ingredients

  • 1 tsp vegetable oil​
  • ½ onion, finely chopped
  • 300g 5% fat steak mince
  • ½ tsp smoked paprika
  • ½ tsp chilli powder (optional)
  • 1 tbsp tomato purée​
  • 75g Red Leicester cheese, grated
  • 75g grated mozzarella
  • 200g bag lightly salted tortilla chips
  • 3 tbsp mayonnaise
  • 1 tsp American yellow mustard
  • 1 tbsp ketchup
  • dash of Worcestershire sauce
  • 50g sliced gherkins, chopped, plus 1 tbsp liquid from the jar
  • 1 salad tomato, chopped
If you don't have mince, cut open some sausages instead

Method

  1. Preheat the air-fryer to 200°C. Line the air-fryer with a sheet of foil and add the onion and mince, breaking up with a wooden spoon. Cook for 5 mins, stirring once, or until the mince is well browned. 
  2. Add the smoked paprika, chilli powder, if using, and tomato purée and season well with salt and black pepper. Cook for a further 2 mins. Remove the mince mixture to a plate and set aside. 
  3. Mix together the grated cheeses. 
  4. Put half of the tortilla chips in the bottom of the air-fryer and sprinkle over half of the cheese. Heap some of the mince into the centre, then cover with the rest of the tortilla chips. Add the rest of the mince and the cheese and cook for 3-5 mins, depending on how crisp you like your nachos. 
  5. While the nachos cook, in a small bowl stir together the mayo, mustard and ketchup. Season with black pepper and a dash of Worcestershire sauce and stir in the 1 tbsp pickle juice. 
  6. When the nachos have cooked, scatter over the chopped tomato, gherkins and the remaining chopped onion. Use a small spoon to drizzle over the sauce before serving.

Tip: If you don't have an air-fryer, fry the mince and onion in a pan until crispy and use a baking tray to build your nachos and melt the cheese under a hot grill.
