3-ingredient maple pecan cookies

Follow our easy 3-ingredient maple pecan cookies recipe for a quick cookie fix. Dates, pecans and maple syrup make the easiest cookie dough ever – don't forget to screenshot the shopping list at the bottom for the quantities before you go shopping!

  1. Blitz

    Preheat the oven to gas 6, 200˚C, fan 180˚C. Line a baking sheet with baking parchment. Set aside 8 pecans for decorating. In a food processor, blitz the remaining pecans and dates together until you have a coarse crumb.

    Tip the mixture into a bowl and stir in the maple syrup, mixing everything together until a dough is formed.

    Shape the mixture into 8 x 4cm balls and arrange on prepared baking tray. Top each cookie with a pecan.

    Slightly flatten each cookie with your hand and bake for 15 mins.
