Method

  1. Put the oil in a large heavy-based pan over a medium heat. Add 2-3 popcorn kernels, cover with a lid and leave to pop (this can take up to 5 mins). This will show you that the oil is now hot enough.
  2. Remove the pan from the heat and uncover. Add all the remaining corn, cover with the lid and shake the pan to mix the corn with the hot oil. Set aside for 1 min to rest and come to an even temperature.
  3. Return the pan to the heat. Shake every now and again as the rest of the kernels pop – you may need to crack the lid slightly to let a little steam out. When the popping has really slowed down, remove from the heat.
  4. Toss with any additional flavourings while still hot, then allow to cool slightly before serving.

Tip: You can add lots of different flavours to your popcorn, both sweet and savoury. Toss through seasonings or sugars, drizzle over sticky syrups and sauces, or scatter over crunchy toppings. Stay simple with a pinch of salt or dusting of cinnamon sugar, or go extravagant with a swirl of melted dark chocolate and sprinkle of orange zest, or drizzle with tahini and soy sauce before scattering with chopped chilli and sesame seeds.
