Ingredients

  • 50g unsalted butter, melted
  • 50g Parmesan or Pecorino*, grated (see tip)
  • 600g new potatoes, halved lengthways
If you haven't got any new potatoes, try dicing a large white potato instead

Method

1. Heat the oven to gas 6, 200°, fan 180°C. Pour the melted butter over a non-stick baking tray, then scatter over the cheese in an even layer. Lay the potatoes over the top, cut side down and bake for 20 mins until the cheese is golden and the potatoes are just tender.

2. Leave to cool for 10-15 mins until the cheese is starting to harden, then carefully peel the potatoes off the tray and put them on a serving plate.

Tip: Grate the cheese on the second smallest side of your grater. If it’s too fine, it doesn’t stick together quite as well.

*Make this recipe vegetarian by using Pecorino cheese instead of Parmesan.
