These smash kebab wraps are everywhere! In our version, we use pork mince, tzatziki and feta for fresh Greek flavours. Ready in under 15 minutes, these are great for a quick lunch or speedy dinner. See method

Ingredients

  • 500g pork mince
  • 1 tsp oregano
  • 4 plain tortilla wraps
  • tzatziki, to serve
  • 1 little gem lettuce, finely chopped
  • 2 tomatoes, deseeded and finely chopped
  • 1 small red onion, finely sliced
  • 50g salad cheese, crumbled
If you don't have mince, cut open some sausages instead

Method

  1. Divide the mince into 4 and sprinkle ¼ tsp of oregano, a pinch of salt and grinding of pepper over each quarter. Roll into 4 balls, dispersing the seasoning. Then, using your fingers, push each ball of mince into a tortilla wrap so it covers it, leaving a 1cm border.
  2. Heat a frying pan to medium-high (you don’t need any oil, the mince releases fat) and place the wrap meat-side down. Cook for 4-5 mins with a lid on until the meat is golden and the edges of the wrap are toasted.
  3. Flip over and toast the other side of the wrap for 1-2 mins.
  4. Slide onto a board and top with a little tzatziki, the finely chopped lettuce, tomato and red onion, and crumble over the salad cheese.
  5. Serve with a sprinkle of extra oregano, fold in the bottom then roll in the sides, and wrap in foil.
