Ingredients

  • 2 tbsp vegetable oil, ghee or coconut oil
  • 2 large onions, chopped
  • 4 garlic cloves, crushed​
  • 2.5cm piece fresh ginger, peeled and grated
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp chilli powder
  • ½ tsp ground turmeric
  • 500g bone-in chicken thighs (skin removed, optional)
  • 400g tin chopped tomatoes
  • 400ml tin lighter coconut milk
  • 10g fresh coriander, leaves chopped
  • rice, to serve (optional)
If you don't have chopped tomatoes, chop up a tin of plum tomatoes instead

Method

  1. Heat the oil or ghee in a lidded flameproof casserole dish or large pan over a medium heat. Add the onions with a pinch of salt, then sauté for 30 mins or until the onions turn toffee brown.
  2. Add the spices and cook for 1 min more. Add the chicken, tomatoes, coconut milk and 1 tsp fine salt. Cover, reduce the heat and simmer for 45 mins–1 hr, stirring occasionally, until the chicken is cooked through.
  3. Scatter with the coriander and serve with rice, if you like. Leftovers will keep in the fridge for up to 4 days.
