A warm pasta salad that's perfect for balmy evenings, this easy-to-make dinner uses skinless chicken breast, smoky bacon and pasta shells tossed with chives, green beans and dressing. See method

Ingredients

  • 2 skinless chicken breasts, sliced
  • 6 rashers of smoky bacon, sliced
  • 300g Conchiglie pasta
  • 2 tbsp olive oil
  • 2tbsp chives roughly chopped
  • 100g green beans sliced into thirds

For the dressing

  • 1tbsp wholegrain mustard
  • 3 tbsp olive oil
  • 1tbsp white wine vinegar
  • 1tsp maple syrup

Method

A warm pasta salad that's perfect for balmy evenings, this easy-to-make dinner uses skinless chicken breast, smoky bacon and pasta shells tossed with chives, green beans and dressing.

  1. In a large pan of salted water, cook the pasta according to the packet instructions. 4 minutes before the end of cooking time add the green beans. Drain. Toss in 1tbsp of the olive oil, cover and set aside to keep warm. In a large frying pan heat the remaining olive oil add the bacon and cook until crispy, remove from the pan and set aside. Add the sliced chicken to the same pan fry until lightly browned and completely cooked and the juices run clear when a skewer is inserted.
  2. Add the cooked chicken, bacon and chives to the pasta. Combine all the ingredients for the dressing, pour over the pasta. Gently mix together all the ingredients, making sure everything is thoroughly coated in the dressing, season and serve.
