This 15-minute salad is bursting with summer flavour from the fresh peaches, juicy tomatoes and creamy burrata. Serve with griddled ciabatta toasts so you can eat it bruschetta-style! Great for alfresco dining, especially when paired with a crisp, sparkling S.Pellegrino water. See method

Ingredients

  • 2 ciabatta rolls
  • 1 garlic clove, halved
  • olive oil, for drizzling
  • 500g salad tomatoes, sliced
  • 250g pack Tesco Finest mixed baby tomatoes, halved
  • 3 peaches, stoned and cut into wedges
  • 60g pack wild rocket​
  • 20g basil, leaves picked
  • 250g Tesco Finest Italian burrata, divided into chunky pieces with a spoon

For the dressing

  • 2½ tbsp olive oil
  • juice of ½ lemon​
  • 10g basil, leaves picked and finely chopped

Method

  1. Whisk together the dressing ingredients, season, then set aside.
  2. Preheat the grill to high. Thinly slice the ciabatta rolls lengthways. Lay on a baking tray and grill for 1 min each side until golden. Allow to cool a little, then rub with the cut sides of the garlic. Drizzle with a little olive oil.
  3. In a large salad bowl, gently toss together the tomatoes, peaches, rocket and basil leaves. Transfer to a platter and add the burrata pieces. Drizzle over the dressing, then serve with the ciabatta alongside.
