Ingredients

  • 1⁄8 tsp liquid blue food colouring
  • 7-8 ice cubes
  • 45ml tequila
  • 30ml white rum
  • 1½ tsp lime cordial
  • ½ tsp lemon juice
  • 1 tsp sugar
  • 60ml cloudy apple juice

For the garnish

  • a strip of lemon peel
  • 3 blueberries skewered on a cocktail stick
If you don't have any limes, try a lemon instead

Method

  1. Put ⅛ tsp liquid blue food colouring into the base of a highball glass. Put 7-8 ice cubes in a cocktail shaker or large lidded jam jar with 45ml tequila, 30ml white rum, 1½ tsp lime cordial, ½ tsp lemon juice and 1 tsp sugar. Shake well. Fill the glass with ice.
  2. Strain the cocktail into the glass, tilting the glass slightly so the cocktail hits the side of the glass before it hits the bottom. Gently top up with 60ml cloudy apple juice. Give the base a gentle stir with a skewer to disperse the blue slightly and create an ombre effect. Garnish with a strip of lemon peel and 3 blueberries skewered on a cocktail stick.
