Ingredients

  • 300g fine green beans
  • 2 tbsp extra-virgin olive oil
  • 200g shelled baby broad beans, fresh or frozen (defrosted if frozen)
  • 200g fresh or frozen peas (defrosted if frozen)
  • 10g fresh dill, chopped
  • 20g fresh mint leaves, roughly chopped
  • 25g feta, crumbled

Method

  1. Blanch the green beans in a large pan of boiling water for 1 min. Drain, rinse with cold water and pat dry with kitchen paper.
  2. Heat the oil in a large saucepan over a low heat. Add the green beans, the broad beans and the peas; gently heat for 10 mins or until warmed through. Remove from the heat and add the herbs and some seasoning. Top with the feta to serve.
