Ingredients

  • ice cubes
  • 1 cucumber
  • 10 blueberries
  • 100ml gin
  • 100ml tonic water
  • 250ml prosecco
  • 4 sprigs of thyme
  • 2 lime wedges
If you don't have any limes, try a lemon instead

Method

  1. Fill 2 large coupe glasses with ice cubes. Peel 2 long strips of the cucumber with a vegetable peeler and add 1 to each glass with a few blueberries.
  2. Divide the gin and tonic water between each glass and stir to combine. Top each up with 125ml prosecco. Garnish each drink with 2 thyme sprigs and a lime wedge.
