For a quick and easy meal, knock up this spanish pasta salad in under 20 minutes. With a garlic, paprika and lime juice dressing, and chopped crunchy peppers, juicy spring cherry tomatoes and spring onions, this lunch hits all the right notes. See method

Ingredients

  • 300g Tesco Free From fusilli pasta
  • 4 spring onions, trimmed and roughly chopped
  • 1 red pepper, deseeded and cut into cubes
  • 1 green pepper, cut in half, deseeded and roughly chopped
  • 1 red chilli, seeded and finely chopped
  • 200g cherry tomatoes, halved

For the dressing

  • 4 tbsp olive oil
  • 2 garlic cloves, crushed
  • 1 lime, juiced
  • ½ tsp smoked paprika
  • 100ml tomato juice
If you haven't got fusilli, try using penne or another short pasta

Method

  1. Bring a large pan of water to the boil and cook the fusilli according to package instructions; drain and set aside. Make the dressing by combining all the ingredients together and season to taste.
  2. In a large bowl combine the pasta, spring onions, peppers, chilli and tomatoes. Add the dressing ingredients and toss well. Serve immediately.
