Ingredients

  • 3 small sweet potatoes, cut into in 1cm-thick slices
  • 180g pack Fire Pit The Smoky One Marinade
  • 1 tbsp vegetable oil
  • 1 tbsp chopped fresh coriander
  • 1 lime, cut into wedges, to serve
If you don't have any limes, try a lemon instead

Method

  1. Light the barbecue. While it heats up, put the sweet potatoes into a large zip-seal bag and squeeze over the marinade. Add the oil and season. Seal and shake until well coated, then set aside for 20 mins to marinate.
  2. Once the barbecue flames have died down and the coals are white and ashy, cook the sweet potato slices for 8-10 mins each side, turning occasionally, until easily pierced with a fork.
  3. Put into a serving dish and scatter over the coriander. Serve with the lime wedges to squeeze over.
