Quick turkey koftas and pitta with crunchy veggies recipe

Liven up the kids' lunches these homemade turkey koftas. Stuff them into toasted pittas with a garlic-infused yogurt and serve with colourful crunchy veggies. See method

Ingredients

  • ½ 500g pack turkey breast mince, 2% fat
  • 1 red onion, ½ grated and ½ thinly sliced
  • 10g coriander, finely chopped
  • 1tsp vegetable oil
  • 2 tbsp Creamfields Greek style natural yogurt
  • 1 garlic clove, finely crushed
  • 2 wholemeal pitta breads
  • ¼ iceberg lettuce, finely shredded
  • 50g mild salsa
  • ¼ red pepper, finely chopped
  • ¼ cucumber, finely chopped
If you don't have red onions, try using white, brown or spring onions

Method

1. Preheat the grill on high.

2. Mix the turkey mince, grated onion and half the coriander together. Season with freshly ground black pepper. Shape into 4 x 10cm long sausages and brush with oil. Place on a baking tray and grill for 10 mins, turning regularly until golden, crispy and cooked throughout.

3. Meanwhile, mix the yogurt and garlic together.

4. Toast the pittas, slice in a pocket and fill with the lettuce, koftas, remaining onion, salsa, yogurt, pepper, cucumber and remaining coriander.
