Ingredients

  • 1 tbsp olive oil
  • 2 garlic cloves, finely sliced
  • 2 x 400g cans finely chopped tomatoes
  • 1 tsp dried oregano
  • 2 basil sprigs, leaves picked
  • 100g pizza mozzarella, finely sliced
  • 4 eggs
  • 8 slices Tesco Finest pepperoni
  • 4 slices garlic ciabatta
If you don't have chopped tomatoes, chop up a tin of plum tomatoes instead

Method

  1. Preheat the oven to gas 6, 200°C, fan 180°C. Heat the oil into an oven-proof frying pan, add the garlic and place over a low heat. Fry the garlic for 1-2 mins until softened and aromatic. Add the tomatoes, oregano and half the basil leaves. Stir, then simmer gently for 8-10 mins until slightly thickened and reduced. Season to taste.
  2. Scatter the cheese into the pan, then make 4 indents in the sauce and crack an egg into each. Dot the pepperoni over the top, avoiding the yolks, and bake for 8-10 mins until the eggs are just set. Place the ciabatta slices on a baking tray and bake in the top half of the oven for 8 mins. Serve alongside the eggs.
