Ingredients

  • 450ml whole milk
  • 2 large egg yolks
  • 60g caster sugar
  • 2 tbsp cornflour
  • 1 tsp vanilla bean paste or extract

Method

  1. Heat the milk in a large saucepan over a medium heat for 2 mins or until steaming.
  2. Whisk together the egg yolks, caster sugar, cornflour and vanilla bean paste in a large, heatproof bowl. Gradually add in the warmed milk, whisking constantly with a balloon whisk, until combined.
  3. Return to the pan and cook, stirring constantly with a wooden spoon or spatula, over a low-medium heat for 4-5 mins, until thickened. It should be thick enough to coat the spoon or spatula.
