Ingredients

  • 400g tinned peaches, in juice
  • juice of 1 lemon
  • 300ml sparkling water
  • 50ml elderflower cordial
  • 3 sprigs rosemary
  • 1 ripe peach, destoned, halved and sliced

Method

  1. Tip the peaches, juice and all, into a blender and add the lemon juice. Blitz until smooth, then push through a fine sieve to ensure it’s even smoother.
  2. Discard any pulp or coarse fibres left in the sieve, and pour the purée into a large jug. Fill this with ice cubes and stir, then top with the sparkling water and elderflower cordial.
  3. Add the rosemary sprigs and the sliced fresh peach, if you like. Stir gently to combine, without knocking out too much of the fizziness. Serve in ice-filled tumblers.
