One-pan orzo and prawns

Add this easy summer one pot to your midweek repertoire. Plump prawns, tangy feta and crunchy vegetables come together for an Italian-inspired feast that feels a bit special.

Serves 4

Ingredients:

300g orzo
400g tin chopped tomatoes
156g raw jumbo prawns
220g stir-fry vegetable medley
50g feta

Method:

1. Heat 1tbsp olive oil in a large frying pan over a high heat. Add 300g Tesco Finest orzo and fry for 1 min until lightly toasted. Add 400g tin Tesco Italian chopped tomatoes, a pinch of salt and 500ml boiling water. Stir to combine, bring to the boil then reduce to a simmer and cook for 12-15 mins, stirring occasionally, until the orzo is al dente with a slight bite to it.

2. Add a splash more boiling water if needed. Meanwhile roughly chop one 220g pack Tesco stir fry vegetable medley. Mix in 165g pack Tesco Finest raw jumbo king prawns and the stir fry vegetables to the orzo, reserving the spring onion, and cook for a further 2 mins until the prawns are bright pink and cooked throughout.

3. Season, then top with the spring onion and 50g crumbled feta to serve.
