Method

  1. Heat 1 tbsp oil in a saucepan over a medium heat, then fry half the garlic for 1 min until soft but not browned.
  2. Stir in the tomatoes and mixed herbs. Rinse the empty tomato carton with a splash of water, add this to the pan and bring to the boil. Reduce the heat and simmer gently for 20 mins until reduced. Set aside and keep warm.
  3. Meanwhile bring a large pan of water to the boil and cook the pasta to pack instructions.
  4. Heat 1 tbsp oil in a nonstick frying pan and fry the mushrooms and onion for 5 mins until soft and starting to brown. Add the garlic and fry for 1 min before adding the balsamic vinegar and crushed chillies. Bring to the boil and bubble for 2 mins until reduced and sticky.
  5. Drain the pasta, reserving a little cooking water. Stir the pasta into the tomato sauce with a splash of cooking water to loosen if needed. Stir through the torn basil.
  6. Divide the pasta between the bowls and top with some of the balsamic onions and mushrooms. Garnish with a few extra basil leaves and a grind of black pepper. Serve immediately.
