Ingredients

  • 300g spaghetti
  • 4 smoked mackerel fillets, skinned and flaked
  • 200g (7oz) extra light soft cheese
  • 1 bunch spring onions, chopped
  • 1 lemon, juiced
  • large handful rocket
If you haven't got spaghetti, try using linguine instead

Method

A great tasting and value meal for all the family, oily mackerel works so well folded though a helping of spaghetti and covered in a decadent, creamy sauce.

  1. Bring a large pan of water to the boil and cook the pasta following the packet instructions. Drain, reserving 100ml (3 1⁄2fl oz) pasta water.
  2. Return the pan to the hob and add the flaked mackerel, soft cheese, onions and lemon juice, stirring until the cheese has melted.
  3. Add the pasta, reserved water and rocket and toss to combine.
  4. Serve immediately with freshly ground black pepper, if you like.
