This lemony courgette linguine makes a zingy vegetarian dinner for two. Al dente pasta is stirred into lightly sautéed garlic, capers, and grated courgette. Crème fraîche, fragrant basil and peppery rocket are added to finish. See method

Ingredients

  • 150g (5oz) dried linguine
  • 1 tbsp olive oil
  • 1 medium courgette, grated on the large grater side
  • 1 garlic clove, finely chopped
  • 1tbsp capers, rinsed and drained
  • 2tbsp Healthy Living crème fraîche
  • ½ lemon, zested and juiced
  • 1 x 60g bag rocket
  • handful fresh basil leaves, torn
If you haven't got linguine, try using spaghetti instead

Method

  1. Cook the pasta following the packet instructions.
  2. Heat the olive oil in a large frying pan and add the courgette. Stir for a minute, add the garlic and capers and cook for a minute more.
  3. Drain the pasta and add the courgette mix, crème fraîche, lemon zest and juice, rocket and basil. Season well and toss together.
