Ingredients

  • 650g pack chicken breast fillets
  • 12 smoked streaky bacon rashers
  • 250ml barbecue sauce
  • 2 x 240g packs reduced-fat mozzarella
  • 2 tbsp grated Parmesan (optional)
  • oven-cooked chips and peas, to serve (optional)

Method

  1. Preheat the oven to gas 6, 200°C, fan 180°C. Season the chicken breasts, lay on a board and wrap 3 slices of bacon around each fillet, overlapping slightly and ensuring the ends of the bacon are under the chicken so they don’t unwrap.

  2. Transfer the chicken to a baking dish and bake for 25-30 mins until the bacon is crisp and the chicken is cooked through. Pour over the barbecue sauce and tear over the mozzarella. Scatter with Parmesan, if using, then bake for 5-8 mins until golden and bubbling. Serve with chips and peas, if you like, with the barbecue sauce from the dish poured over.

Get ahead: The whole dish can be made up to 1 day ahead: leave to cool in the baking tray, then cover with foil. Reheat, still covered, at gas 6, 200°C, fan 180°C for 25 mins.
