Ingredients

  • 4tbsp clear honey
  • 1tbsp mirin or dry sherry
  • 1tbsp light soy sauce
  • 3cm (1 1/2in) piece ginger, grated
  • 2 garlic cloves, crushed
  • 4 chicken breasts, cut into 2.5cm (1in) cubes
  • 1/2 bunch spring onions, finely sliced

For the slaw

  • 300g (10oz) red cabbage, finely shredded
  • 1 carrot, grated
  • 100g (3 1/2oz) mangetout, finely sliced
  • ½ bunch spring onions, finely sliced
  • 1tbsp light soy sauce
  • 2 tbsp sesame oil
  • 1tbsp mirin or dry sherry
  • 3cm (1 1/2in) piece ginger, grated
  • 2tbsp sesame seeds
If you don't have any spring onions, try using white onions or leeks and adjust the amount accordingly

Method

Try a spoonful of nature's nectar in loads of delicious dishes, from sweet to savoury. This honey-glazed chicken is sweet and savoury, juicy chunks of chicken are paired with a sweet and sticky marinade and an irresistible crunchy slaw.

  1. Preheat the grill to its highest setting. In a small bowl, combine the honey, mirin (or sherry), soy, ginger and garlic for the glaze.
  2. Thread the chicken onto 8 small or 4 large metal skewers (or soaked, wooden skewers), alternating with a piece of spring onion. Brush the chicken pieces all over with the honey glaze. Cook under the grill (or in a hot griddle pan or on the barbecue) for 10–15 minutes, turning until golden and cooked through with no pink showing.
  3. Meanwhile, prepare the slaw. In a bowl, combine the red cabbage, carrot, mangetout and spring onions. For the dressing, mix the soy sauce, sesame oil, mirin (or sherry) and ginger in a jug. Pour over the slaw, add the sesame seeds and toss. Serve with the chicken skewers, garnished with some coriander sprigs, if you like.
