Method

  1. Put the prawns in a bowl with the rice wine, bicarbonate of soda and ½ tsp salt. Use your hands to massage until the liquid has mostly been absorbed. Add the cornflour and massage in, followed by ½ tbsp oil. Massage once more, then set aside to tenderise.
  2. Cook the noodles in a large pan of boiling water for 1 min, then add the carrot and cabbage; cook for 1 more min or until tender. Drain and set aside.
  3. Mix the sauce ingredients together in a bowl with 3 tbsp water; set aside.
  4. Heat the remaining oil in a wok over a mediumhigh heat; fry the onion for 6-8 mins. Add the garlic and spring onions and fry for 1-2 mins until fragrant. Add the prawns and cook for 1-2 mins, until the prawns are firm and have turned pink.
  5. Stir in the noodles, carrot and cabbage, and pour over the sauce. Cook for 1-2 mins to heat through, then drizzle with the sesame oil and scatter with sesame seeds, if you like.
