Air-fryer crispy prawn cocktail toast bites recipe

Combining two classics – Chinese-inspired prawn toast and retro-style prawn cocktail – these bite-sized canapés bring comfort and joy in equal measure. Better still, they take just 10 minutes to prepare and 10 minutes to cook in the air-fryer, while you can dial up the spice for extra heat. See method

Ingredients

  • spray oil
  • 4 slices white bread
  • 170g frozen raw king prawns, defrosted
  • 5g fresh chives, finely chopped
  • 1 tbsp lemon juice, plus wedges to serve
  • dash of Tabasco sauce (optional)
  • 50g iceberg, thinly shredded

For the Marie Rose dipping sauce

  • 4 tbsp Greek yogurt
  • 3 tbsp light mayonnaise
  • 2 tbsp ketchup
  • 1 tsp Worcestershire sauce
  • dash of Tabasco sauce (optional)
If you haven't got any white bread, try using brown instead

Method

  1. Preheat the air-fryer to 200°C.
  2. Slice each piece of bread into 4 triangles. Spray both sides with some oil.
  3. Finely chop the defrosted prawns, or pulse briefly in a food processor, you still want the prawns to have visible chunks and not be completely smooth. Tip into a bowl, season with salt and black pepper and add the chopped chives.
  4. Stir through the lemon juice and Tabasco, if using. Use a spoon to thickly spread the prawn mixture across all 16 triangles of bread.
  5. Carefully put the triangles into the air-fryer and spray the tops with some oil. You may have to work in batches. Cook for 8-10 mins, until the edges of the toasts have browned and the prawn topping is cooked through.
  6. While the toasts cook, stir together the sauce ingredients and spoon into a serving dish.
  7. Arrange the prawn toasts on a serving plate and garnish with lemon wedges and small heaps of iceberg lettuce. Serve while still warm.

Tip: Add as much or as little Tabasco as you prefer; a dash goes a long way!
