These crispy stuffed olives are seriously worth the hype. Make a garlic and cheese sauce to fill your olives, then coat in golden breadcumbs. We like to use an air-fryer to cook these to get them extra crispy. See method

Ingredients

  • 50g le roulé garlic & herb cheese or soft cheese
  • 30g grated parmigiano reggiano
  • 1-2 tbsp milk
  • 140g large green pitted olives, such as Italian nocellara
  • 20g plain flour
  • 1 large egg, beaten
  • 50g golden breadcrumbs
  • 2 sprigs thyme
  • oil spray
  • 1 tbsp extra-virgin olive oil
  • 200g garlic & herb passata
  • 1 tbsp chopped flat-leaf parsley

Method

  1. Put the garlic roulé or soft cheese into a bowl and stir until smooth. Add half the Parmesan and season with black pepper. Thin with a little milk until almost runny and pipeable.
  2. Spoon the mixture into a small piping bag and use to fill the olives.
  3. Preheat the air-fryer to 200°C.
  4. Set out 3 separate small bowls with the flour, beaten egg and breadcrumbs. To the breadcrumbs, add the remaining Parmesan and the thyme leaves.
  5. A few at a time, toss the filled olives in first the flour, then the egg and then the breadcrumbs, tossing until well coated.
  6. Spray the basket of the air-fryer with some oil and add the coated olives. Spray the tops with more oil and cook for 5-8 mins, shaking every 2 mins, until golden brown and crisp all over.
  7. Meanwhile, make the marinara dip. Stir together the olive oil, passata and parsley. Season with salt and black pepper and heat through, either in a small saucepan on the hob or in a jug in the microwave. Pour into a small serving bowl and serve alongside the crispy olives.

Tip: For a dairy-free option, instead of using soft cheese, cut some spicy chorizo slices into strips, roll up and push into the olives. Coat as below, leaving the parmesan out from the breadcrumbs.
