Ingredients

  • 400g pitted cherries
  • 150g caster sugar
  • creamy dark chocolate sorbet (see recipe, above)
  • coconut sorbet (see recipe, above)
  • toasted, dessicated coconut (optional)

Method

  1. Cook the cherries in a saucepan with the caster sugar and a splash of water for 8-10 mins, until starting to break down. Leave to cool completely, then blitz smooth.
  2. Layer up scoops of the creamy dark chocolate and coconut sorbets, drizzle with the cherry coulis and top with extra cherries and toasted desiccated coconut, if you like.
