Ingredients

  • 200g cherries
  • 1 tbsp caster sugar​

For the frumpets

  • 1 tsp cocoa powder
  • 75ml milk
  • 2 eggs
  • 2 tbsp caster sugar
  • 4 crumpets
  • ½ tbsp butter
  • 50g 0% fat Greek-style yogurt
  • 10g 75% dark chocolate

Method

  1. Pit the cherries then put half in a small saucepan. Sprinkle with 1 tbsp caster sugar, add a splash of water and cook over a low-medium heat, stirring occasionally, for 4-5 mins until saucy and slightly softened.
  2. Meanwhile, in a shallow baking dish or bowl, whisk the cocoa powder with the milk, eggs and caster sugar. Soak the crumpets in the liquid for 1 min each side.
  3. Melt the butter in a nonstick frying pan over a medium heat, then fry the crumpets for 2-3 mins each side until golden.
  4. Serve with yogurt, cooked cherries and the remaining fresh cherries. Grate over some dark chocolate to serve.
