Looking for a quick and easy dinner? Look no further. This simple healthy chilli prawn stir-fry, with colourful red pepper, pak choi and broccoli packs a flavour punch and is ready to eat in 20 minutes. See method

Ingredients

  • 2 tbsp sesame oil
  • 1 red chilli, cut into thin strips
  • 3cm piece ginger, peeled and chopped
  • 2 garlic cloves, sliced
  • 1 red pepper, deseeded and sliced
  • 200g Tenderstem broccoli, cut into long, thin slices
  • 6 spring onions, thinly sliced
  • 200g raw peeled prawns
  • 2 pak choi, sliced
  • 150g rice noodles
  • 4 tbsp soy sauce
  • 3 tbsp sweet chilli sauce
  • 1 tbsp sherry or rice wine vinegar
If you don't have any spring onions, try using white onions or leeks and adjust the amount accordingly

Method

  1. Heat the sesame oil in a wok or large frying pan over a high heat. Cook the chillies, ginger and garlic for 30 secs, then add the pepper, broccoli, spring onions and prawns. Cook for 4-5 mins until the prawns have turned pink and the vegetables have softened.

  2. Add the pak choi, noodles, soy sauce, chilli sauce and vinegar to the pan. Cook for 1-2 mins until fully heated through, then serve immediately.
