Next time you are craving pizza, make these cheesy green goddess pizzas. Creamy garlic and herb cheese makes a super simple pizza sauce, topped with plenty of fresh green veg and a scattering of extra cheese to finish. See method

Ingredients

  • 2 x 145g packs pizza base mix
  • 150g 50% less fat garlic & herb soft cheese
  • 100g soured cream
  • 1 lemon, zested 
  • 200g Tenderstem broccoli
  • 150g sugarsnaps
  • 1 courgette, peeled into ribbons
  • 4 spring onions, finely chopped
  • 15g fresh basil, roughly chopped
  • handful rocket, to serve
If you don't have sour cream, use crème fraîche or yogurt

Method

  1. Preheat the oven to gas 7, 220 ̊C, fan 200 ̊C. Make the pizza bases to pack instructions. Roll out to 2 large, rough circles and slide onto lightly greased baking sheets. Turn up the edges a little to form a crust. Set aside in a warm place.
  2. Add the cheese (reserving 10g to dot over at the end), soured cream and lemon zest to a small bowl. Season with pepper and mix until smooth.
  3. Bring a pan of water to the boil and blanch the broccoli and sugarsnaps for 2 mins. Drain and run under cold water to cool. Pat dry and set aside.
  4. Spread the cheese mixture over the pizza bases, leaving a 2cm border. Top with the sugarsnaps, broccoli, courgette, spring onions and most of the basil. Bake for 10-15 mins until the crust is golden. Top with the remaining cheese, rocket and remaining basil.
