The whole family loves a classic spaghetti bolognese and we've made this delicious pasta recipe a little more nourishing by adding grated carrots, courgette and fresh tomatoes. With the same great bolognese flavour, the kids will never know it's packed with veg! See method

Ingredients

  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 carrots, peeled and grated
  • 1 medium courgette, grated
  • 625g steak mince
  • 2 tbsp plain flour
  • 2 tbsp tomato purée
  • 600ml beef stock
  • 1 x 200g tin chopped tomatoes
  • 300g (10oz) fresh tomatoes, roughly chopped
  • spaghetti to serve
If you don't have mince, cut open some sausages instead

Method

  1. Heat 1 tbsp of the oil in a large, heavy-based frying pan and cook the onion, carrot and courgette over a moderate heat for 5-6 minutes, stirring occasionally until soft. Remove the vegetables from the pan and set aside.
  2. Add the mince to the pan and cook over a high heat for 4-5 minutes, stirring frequently until browned all over. Return the vegetables to the pan, add the flour and stir well to coat lightly. Add the tomato purée to the beef stock and stir well, then add the stock to the meat along with the chopped and fresh tomatoes. Bring to the boil, reduce the heat and cover and simmer for 20 minutes, stirring occasionally.
  3. Serve with your favourite pasta and Parmesan cheese, if desired.
