This bloody Mary-inspired salad is packed with flavour and perfect for packing up for a picnic. The tangy dressing has all the flavour of the classic cocktail with vodka, Worcestershire sauce, horseradish and hot pepper, just whisk together then pour our tomatoes and celery. Top with fresh, fragrant basil just before serving. See method

Ingredients

  • 800g (1lb 10oz) mix of vine, baby red and orange tomatoes, sliced, juiced reserved
  • 2 celery sticks, finely sliced
  • large handful fresh basil leaves

For the dressing

  • 2 tbsp vodka (optional)
  • 1 tbsp sherry vinegar
  • 2 tsp Worcestershire sauce
  • 1-2 tsp finely grated fresh horseradish (plus extra shavings, to serve, if you like)
  • hot pepper sauce, to taste
  • 1/2 tsp celery salt
  • 80-100ml (3-3 1/2fl oz) extra-virgin olive oil

Method

  1. To make the dressing, whisk the vodka (if using), vinegar, Worcestershire sauce, horseradish and hot pepper sauce (to taste) in a bowl, along with any tomato juices. Add the celery salt and enough olive oil to bind it together.
  2. Put the tomatoes and celery in a lidded container and pour over the dressing; seal. Transport the basil to the picnic in a small bag and scatter over the tomatoes before serving.
