Asian-style barbecue pork sliders recipe

Tender, spiced pulled pork goes perfectly with tangy pickled apple in these sliders. Add in the crunch of prawn crackers and you're in burger heaven! See method

Ingredients

  • 1 x 700g pack pork shoulder steaks​
  • 1 tbsp smoked paprika​
  • 1 tsp Chinese five spice
  • 2 tsp sugar
  • Pinch of salt
  • 2 tbsp sunflower oil​

For the gravy

  • 300ml cider
  • 3 tbsp BBQ sauce
  • 1 tbsp sesame oil​
  • Juice of 1 lime, plus extra wedges to serve
  • 8 x seeded brioche buns
  • prawn crackers, to serve (optional)

For the pickled apple

  • 1 large or 2 small red apples, unpeeled but cored and cut into matchsticks
  • ½ red onion, peeled and sliced

For the dressing

  • 2 tbsp white wine vinegar​
  • 1 tbsp caster sugar​
  • 2 tsp black or white sesame seeds​
If you don't have any limes, try a lemon instead

Method

  1. Preheat the oven to gas 3, 160C, fan 140C.​
  2. Mix the spices with the sugar and salt, then rub over the pork.
  3. Heat the oil in an ovenproof saucepan over a medium heat, then sear the pork to brown the edges. Pour in the cider and bring to a simmer. Cover, place in the oven for 1-1.5 hrs.
  4. While the pork is cooking, prepare the pickled apple. Toss together the apple, red onion, vinegar and sugar. Set aside to marinate for at least 30 mins.​
  5. Check the pork after 1 hour, and every 20 mins after that. It is ready when it breaks away with a fork. Remove from the oven and allow the pork to cool slightly, then use two forks to pull the pork to pieces. Stir through a little cooking liquid and the BBQ sauce, sesame oil and lime juice.
  6. Stir the sesame seeds through the pickled apple.​
  7. To fill, divide the pork filling between the rolls, top with the pickled apple and a couple of prawn crackers, then serve with extra prawn crackers, if desired.​​
