Move beyond plain gin and tonics with this easy gin cocktail that tastes like summer in a bottle. Gin, peach schnapps and apple juice combine for a sweet drink that is perfect for any summer party. See method

Ingredients

  • 16 slices cucumber (peel on), plus some peeled into ribbons
  • 8 fresh mint sprigs, leaves only, plus extra sprigs to garnish
  • 150ml gin
  • 50ml peach schnapps
  • 1 lime, juiced
  • 800ml apple juice, chilled
  • 1 peach, sliced, to garnish
If you don't have any limes, try a lemon instead

Method

  1. Put the cucumber slices and mint leaves in large jug with a splash of the gin and muddle together with a cocktail muddler or the end of a rolling pin until the mint is thoroughly bruised and the cucumber has broken down. Stir in the remaining gin and the peach schnapps. Add the lime and apple juice, stir to combine, then strain into a 1.5ltr bottle.
  2. Chill for up to 1 day before serving. Serve with few sprigs of mint, cucumber ribbons and peach slices to garnish.
