5 kids' lunches for £15: Week 2

From quick minestrone to speedy sausage pasta; try five easy kids' lunches all for less than £15*. We've done the hard work for you and prepared a shopping list at the bottom of the page. You can either shop online, choose Click+Collect or screenshot the list before you head in-store

  1. Monday: Speedy sausage orzotto

    Monday: Speedy sausage orzotto

    ½ tbsp vegetable oil
    3 reduced-fat pork sausages, skin removed and cut into small chunks
    1 small onion, finely chopped
    1 celery stick, finely chopped
    150g orzo
    1 reduced-salt vegetable stock cube, made up to 500ml
    2 tbsp 50% less fat soft cheese
    15g fresh cut flat-leaf parsley, finely chopped
    30g wild rocket
    2 cherry tomatoes, quartered

    1. Heat the oil in a large frying pan over a medium heat. Add the sausage, onion and celery and fry for 5 mins until the sausage is golden. 

    2. Add the orzo and stock, bring to the boil and cook for 15 mins, stirring occasionally, until the orzo is al dente. Add a splash more water if the mix becomes too thick. 

    3. Remove from the heat and stir through the cream cheese and parsley. Serve with the rocket and tomatoes.

  2. Tuesday: Sweet potato and beef quesadillas

    Sweet potato and beef quesadillas

    1 sweet potato, peeled and cut into 1cm cubes
    A spray of vegetable oil
    250g (from 500g pack) 5% fat beef mince
    ½ red onion, finely chopped
    2 garlic cloves, finely crushed
    1 tbsp tomato purée
    150g taco mixed beans (from a 395g tin)
    2 plain tortilla wraps, cut into triangles
    30g grated lighter mature Cheddar

    1. Add the sweet potato to a pan of boiling water and cook for 8-10 mins until soft. Drain. 

    2. Heat the oil in a large frying pan over a high heat. Add the mince, onion and garlic and fry for 8 mins until the mince is starting to crisp at the edges. Stir through the tomato purée, mixed beans and drained sweet potato. 

    3. Divide the beef and bean mix between two tortillas, placing it on one half of each tortilla. Top with the Cheddar and fold over the wraps to sandwich each quesadilla. 

    4. Slide the quesadillas into a dry frying pan and cook for 2-3 mins then flip and cook for another 2 mins until the cheese has melted. Slice in half to serve.

  3. Wednesday: Quick orzo minestrone

    Minestrone soup

    1 white batch roll, torn into bite-sized chunks
    1 tbsp vegetable oil
    1½ carrots, finely chopped
    1 celery stick, finely chopped
    ½ red onion, finely chopped
    2 garlic cloves, finely chopped
    1 tbsp tomato purée
    400g tin chopped tomatoes
    1 reduced salt vegetable stock cube, made up to 400ml
    60g orzo
    15g pack flat-leaf parsley

    1. Preheat the oven to gas 4, 200°C, fan 180°C. Toss the rolls in ½ tbsp vegetable oil and bake for 10 mins until golden and crisp. 

    2. Meanwhile, heat the remaining oil in a large saucepan over a medium heat and fry the carrots, celery, red onion and garlic for 5 mins until the veg is beginning to soften. Add the tomato purée, chopped tomatoes, stock and orzo. Bring to the boil, then simmer for 12-15 mins until the orzo is al dente. Stir through the parsley. 

    3. Divide the minestrone between 2 bowls and top with the croutons.

  4. Thursday: Baked tortilla nachos

    Baked tortilla nachos

    3 H.W. Nevill’s plain tortilla wraps, cut into triangles
    1 tomato, roughly chopped
    2 tbsp 50% less fat soft cheese
    ½ red onion, finely chopped
    250g taco mixed beans (from a 395g tin)
    30g grated lighter mature cheese

    1. Preheat the oven to gas 6, 200°C, fan 180°C.

    2. Spread the tortilla wraps into a single layer on a baking tray and bake for 10 mins until crisp.

    3. Top the tortillas with the tomato, spoonfuls of the cream cheese, red onion and taco beans. Sprinkle over the Cheddar. Return to the oven for 5 mins until the cheese is melted and golden, and the beans are heated through. Serve immediately.

  5. Friday: Kids' Sloppy Joes

    Sloppy Joe burgers

    ½ tbsp vegetable oil
    250g (from 500g pack) 5% fat beef mince
    ½ red onion, finely chopped
    2 garlic cloves, finely crushed
    1 celery stick, finely chopped
    ½ carrot, finely chopped
    2 tbsp tomato purée
    1 reduced salt vegetable stock cube, made up to 100ml
    2 white batch rolls, sliced in half
    30g grated lighter mature cheese
    30g wild rocket
    8 cherry tomatoes

    1. Heat the oil in a large frying pan over a medium heat. Add the mince, onion, garlic, celery and carrot and fry for 5 mins until the mince is cooked through.

    2. Stir in the tomato purée and stock, bring to the boil and simmer for 5 mins until thickened. 

    3. Fill the rolls with the mince and top with the Cheddar and rocket. Serve with cherry tomatoes on the side.
