3 ways to use up salad leaves

Did you know, 22,000 tonnes of leafy salad is thrown away every year, costing us £64m*! Rather than throwing out your bag of limp leaves, give them a new lease of life with these thrifty fresh ideas that take no more than 10 minutes each to pull together.

  1. Chimichurri

    Chop up this punchy green sauce. It’s flecked with chilli, onion and any mix of fresh herbs you have to hand. It’s great served alongside a griddled steak, fish or roasted veggies.

    Most people are likely to have a handy little jar of pesto in their fridge but why not try blitzing your own? It’s a great way of breathing new life into limp leaves and can be flexed to whatever nuts or cheese you have in the kitchen. Keep it classic and stir through pasta or try spooning onto pizzas and tarts.

    Whizz up this silky sauce made with yogurt, capers and anchovy fillets for a delicious dip or try using as a sauce for roasted veg. The zesty flavour from the lemon brings a welcome freshness.
